This Tandoori Shawarma brings together the rich, aromatic flavors of tandoor spices with tender chicken thighs marinated in Greek yogurt. The chicken is stacked on a kebab spike, wrapped, and cooked to perfection, resulting in a juicy, flavorful dish. The yogurt sauce adds a creamy, tangy element, while the sumac-tossed onions provide a fresh, zesty crunch. Enjoy wrapped in tanoor bread or naan for a delightful meal.

Mix the chicken thighs with Greek yogurt, garlic paste, ginger paste, olive oil, lemon juice, tandoor powder, salt, pepper, chili powder, garam masala, dried coriander, food colouring, and apple cider vinegar. Marinate overnight, or at least for 1 hour.

Stack the marinated chicken onto a kebab spike and wrap it in greaseproof paper, then in foil.

Cook for 1 hour at 200 degrees Celsius.

Remove the foil and greaseproof paper, brush the chicken with melted butter, and cook for another 10 minutes.

Carve the outside layer. If the inside is not cooked, put it back in and repeat the process.

Mix the Greek yogurt, mayonnaise, salt, lemon juice, garlic paste, dried mint, and pepper.

Toss the sliced onion with sumac and fresh coriander.

Wrap the tandoori shawarma in tanoor bread or naan with the yogurt sauce and onions, and enjoy.
