Mix the lamb with the oil, tomato paste, salt, pepper, ginger powder, turmeric, Libyan spices, clove powder, and red chilli powder and allow to marinate.

Add oil to your pot and add 1 sliced onion. Cook until the onion is softened.

Add the marinated lamb and cook for 10 minutes until browned.

Add a can of blended tomatoes and cook until the mixture is bubbling.

Add hot water and leave to cook for around 90 minutes until the lamb is tender.
Cover 1 kg couscous generously in olive oil, 1 tsp Libyan spices, and 1 cup water, making sure it is all coated.

Put the couscous in the couscous pot (steamer) and steam for 30 minutes.

Cover the couscous generously with the sauce from the lamb, then repeat the steaming and saucing process two or three times.

Slice 8 onions and add to a pot with 1/2 cup oil. Close the lid and cook on medium heat for 20 minutes until the onions are soft.

Add 2 tbsp turmeric and 1 can of chickpeas, cover the lid and cook for another 20 minutes until the chickpeas are heated through.

Add 1 tsp ghee, 1 tbsp cinnamon, and a splash of blossom water to your lamb pot and cook for the final 20 minutes until fragrant.

Plate your couscous, add the lamb and onions, and serve with Libyan pickle salad (msayar).
