Soak the moong dal and masoor dal for 30 minutes.
Boil the soaked dals with 2 cups of water until soft.
Heat oil in a pan. Add mustard seeds, hing, and curry leaves until they splutter.
Add onion, tomato, french beans, carrot, and green peas. Cook until the vegetables are slightly tender.
Mix in turmeric powder, red chilli powder, kitchen king masala, and salt.
Pour in ¼ cup water, cover, and cook the vegetables for 4–5 minutes until they are soft.
Add the cooked dal and simmer for 2–3 minutes.
Stir in the oats and chopped capsicum. Adjust the consistency with water if required.
Cook on low heat for another 2–3 minutes, then let it rest for a few minutes.
Garnish with fresh coriander leaves and serve hot with a spoonful of cow ghee.
