Heat oil in a pan.
Add chopped onion, dry red chilli and sauté until golden.
Add ginger-garlic paste , few curry leaves and cook for a minute until fragrant.
Mix in chopped tomatoes and cook until soft. Add diced carrot.
Add Kolhapuri masala, turmeric, Kashmiri red chilli powder, and salt. Cook until the oil separates.
Add water and bring to a boil.
Gently add paneer cubes and simmer for 3–4 minutes. You can toss paneer cubes in a tsp of oil for crunchiness before adding. Mix well.
Finish with kasuri methi , fresh cream and fresh coriander.
Serve this instant paneer kolhapuri with crushed onion, naan , jeera rice, bhakris and dal fry.
