Wash the basmati rice thoroughly and soak it in water for 15–20 minutes. Drain and set aside.

Heat oil in a heavy-bottomed pot over medium heat.
Add the cumin seeds, bay leaf, cloves, cinnamon, and green cardamom. Sauté for a few seconds until fragrant.

Add the sliced onion and fry until it turns a light golden brown.

Stir in the ginger-garlic paste and green chillies. Sauté for 1–2 minutes until the raw smell disappears.

Add the green peas and chopped capsicum. Cook for 2–3 minutes.

Add the red chilli powder, coriander powder, crushed kasuri methi, and salt. Pour in ÂĽ cup of water and cook for a minute until the spices blend nicely.

Add the chopped spinach and sauté for just a few seconds until it wilts.

Add the soaked rice and stir it gently with the veggies.

Pour in the water and mix gently. Bring to a boil, then turn the heat low. Cover with a lid and cook until the water is fully absorbed and the rice is tender.

Drizzle the ghee and sprinkle fresh coriander over the top. Turn off the heat, cover the pot, and let it rest for 10–15 minutes.

Fluff gently with a fork before serving.

Serve hot with raita or plain yogurt, a side of a pickle and papad.
