Dry roast the raw rice on medium-low heat until it becomes aromatic and lightly changes color. Allow it to cool completely.


Grind the roasted rice into a fine powder.

In a saucepan, combine water, jaggery, crushed ginger, and cardamom. Bring it to a boil. Strain the mixture to remove any impurities and spices.




Transfer the ground roasted rice to a thick-bottomed kadai. Add cow ghee and mix well.


Gradually add the hot strained jaggery water to the rice-ghee mixture, stirring continuously to prevent lumps.

Continue cooking and stirring until the mixture thickens and starts leaving the sides of the kadai. If needed, add a little more ghee.



Immediately transfer the mixture to a greased plate and spread it evenly. Sprinkle grated coconut. Allow it to cool completely, then cut into squares or diamonds.
