Heat oil in a pan. Add cumin seeds and let them crackle.
Add chopped garlic and green chilli. Sauté briefly.

Add the sliced onions and cook until translucent.

Add red chilli powder, turmeric powder and salt. Mix well.

Add sugar, coriander leaves and carom seeds. Mix.

Add roasted gram flour and combine everything well. If the mixture starts sticking to the bottom, add a few drops of water and mix.

Sprinkle fresh coriander leaves. Transfer the stuffing to a plate and let it cool.
Knead wheat flour into a soft dough. Apply a little oil all over the dough and rest it for 10–15 minutes.



Knead the dough again for a few minutes.
Take a medium-sized portion of dough, dust with flour and roll it into a thin chapati.

Spread ghee evenly over the chapati. Make a single cut from the centre towards the edge.
Spread the prepared Kanda Besan stuffing evenly over the chapati.

Fold the cut section over the adjacent section, continuing the folds until it forms a triangle. Gently press each fold.

Sprinkle black sesame seeds and coriander leaves. Roll it out gently into a thin triangular paratha.


Heat an iron cast tawa well. Place the paratha on it and roast for about 10 seconds.


Dry roast both the sides first. Flip and roast the other side for about 20 seconds.

Flip again, apply some oil and roast. After about 10 seconds, flip and apply oil to the other side.

Flip again after about 20 seconds and cook until golden and nicely roasted on both sides.
Serve hot with a dollop of ghee, onion rings and green chilli.
