Wash the whole green moong thoroughly, strain well, and let it dry until no moisture remains.


Dry roast the moong on medium heat until it turns lightly golden and aromatic. Let it cool completely, then grind it into a fine flour.


Add the ground moong flour back to the pan along with 7 tbsp cow ghee. Roast on low heat until fragrant. Allow it to cool completely.


Heat 1 tbsp cow ghee in the same pan and roast the cashew-almond mix until crunchy. Remove.

In the same pan, roast the makhana until crisp.

Grind the roasted cashews, almonds, makhana, and green cardamoms into a fine powder.

Transfer the roasted moong mixture to a bowl. Add the powdered dry fruits, grated jaggery, and a pinch of salt. Mix well using your fingers until the jaggery is evenly combined.


Add the watermelon seeds and mix again.

Shape the mixture into ladoos.


Store in an airtight container.
