Pat dry the chicken drumsticks thoroughly and make 2–3 deep cuts into each piece down to the bone.

In a large bowl, combine the drumsticks with lemon juice, Kashmiri red chilli powder, and salt. Massage the marinade well into the cuts. Set aside for 15–20 minutes.

Return the seared drumsticks and any accumulated juices to the pan.

Toss thoroughly so the thick masala clings to every piece. Cover with a lid and cook on low heat for 12–15 minutes, turning the pieces halfway through, until the chicken is tender and fully cooked.

Uncover the pan, adjust seasoning, and sprinkle the roasted cumin powder and fresh coriander. Stir gently to combine. Turn off the heat, cover with the lid, and let the dish rest for 5 minutes for the flavours to settle.
