Place chicken mince in a large mixing bowl.

Add ginger-garlic paste to the chicken mince.

Add salt, chaat masala, garam masala, coriander powder, red chilli powder, cumin powder, and black pepper powder.

Mix everything thoroughly with your hands or a spoon until all the spices are evenly incorporated.

Take small portions of the mixture and shape them into smooth, medium-sized round koftas.

Heat enough oil in a frying pan over medium heat.

Carefully place the chicken koftas into the hot oil.

Fry the koftas, turning them gently from time to time, until they become beautifully golden brown on all sides.

Transfer the fried koftas to a plate and keep them aside.

In another pan, heat oil over medium heat.

Add green cardamoms and cinnamon stick.

Add sliced onions and green chillies. Cook until the onions become soft.

Add cashew nuts and continue cooking until the onions become lightly golden and the cashews are lightly roasted.

Turn off the heat and allow the mixture to cool slightly. Transfer it to a blender and blend until you get a completely smooth paste.

Place a pan over medium heat. Add green cardamom and cloves.

Add ginger-garlic paste and sauté for a short time until fragrant.

Add the prepared onion-cashew paste and cook it well, stirring continuously.

Add salt, black pepper powder, cumin powder, and garam masala powder. Mix well.

Slowly pour in milk, stirring continuously so the gravy remains smooth and creamy.

Add fresh cream and mix thoroughly. Cook on low heat for 2–3 minutes.

Gently place the fried chicken koftas into the white creamy gravy. Spoon some gravy over the koftas so they are generously coated.

Cover the pan and simmer on low heat for 5–7 minutes. This allows the koftas to absorb the creamy gravy. Finally, garnish with a little fresh cream and coriander leaves.
