Ingredients
Wet Ingredients
- 1cupplant based milk
- 1can(400g) chickpeas, drained and dried
- 2tbspGreek yoghurt
- 1tspvanilla extract
- 1/4cuppeanut butter
Dry Ingredients
- 1cupoat flour
- 1/4cupnormal white flour
- 1/4cupgranulated sweetener (I used Stevia)
- 1/2tspbaking powder
- 1/4tspbaking soda
- 1/2tspsalt
- 1scoop Bulk vanilla whey protein (optional)
Additional Ingredients
- 1punnet sliced strawberries
- 1handful white chocolate chips
How to make Healthy Strawberry Blondies π
Preparation
Preheat the oven to 180C. Grease a 9x9β baking dish.
Blend all wet ingredients in a food processor until smooth.
In a separate bowl, whisk together the dry ingredients.
Gently mix the dry ingredients into the wet ingredients using a spatula. Avoid over-mixing.
Carefully fold in the sliced strawberries.
Pour the batter into the prepared baking dish.
Baking and Finishing
Bake for 30 minutes or until the blondies are cooked throughout and golden brown.
Allow the blondies to cool once out of the oven.
Melt the white chocolate in the microwave for 20-30 seconds until smooth, then drizzle over the cooled blondies.
Slice and enjoy!
Tips & Tricks
Oat flour - I simply ground 1+1/4 cup regular/rolled oats in a food processor to get 1 cup of oat flour!
Whey protein - I used this to increase the protein content of these blondies, but this is completely optional. You can substitute for more oat/normal flour.
