Tips & Tricks

  1. Use Fresh & Colorful Vegetables. Ensure the vegetables are not overcooked to maintain their texture.

  2. Golden Fried Onions Are Important. This gives authentic Amritsari sweetness and depth.

  3. Even if you cook in oil, add 1–2 spoons ghee while layering. It gives that authentic Punjabi richness.

  4. If cashews are not available, you can whisk curd and add after veggies are cooked that is before layering the rice. Ensure the flame is low to avoid curdling.

  5. For Amritsari Twist, add a pinch of kasuri methi while layering and few drops of kewra water if available.

  6. Resting the biryani for 30-45 minutes enhances its flavor. Mix gently after 45 min of resting.

  7. I used heavy bottomed cooker to make Veg. Amritsari Biryani. You can also use a heavy-bottomed vessel to prevent burning.
