Preheat oven to 425 degrees Fahrenheit. Dice sweet potatoes and toss them with olive oil and all-purpose seasoning (our favorite is Texas Hat Hanger from RubCity - thank us later). Place in a large cast iron skillet and roast for 20-25 minutes.
Chop stems off shishito peppers and dice red onion into large chunks. Mix into skillet with sweet potatoes and roast for an additional 20-25 minutes.
Remove 4-5 roasted shishito peppers and set aside for later. Drain and rinse black beans. Add to skillet with vegetables. Make wells in the mixture and crack eggs into them. Season eggs with salt and pepper. Bake for 8-10 minutes until egg whites are set and yolks are slightly runny.
Add your removed shishito peppers to a blender or food processor. Remove stems and rinse parsley. Add parsley, 4-5 shishito peppers (the rest will remain whole in the skillet), 1/4 cup olive oil, red wine vinegar, lime juice, garlic, and salt in a food processor or blender until desired consistency.
Heat a pan over medium/high - high heat. Season steaks with your desired steak seasoning (we used the same all-purpose rub as the sweet potatoes, RubCity Texas Hat Hanger) and sear each side for 3-4 minutes until a thermometer reads about 130 degrees Fahrenheit. Remove from heat and let rest for 10 minutes, then slice against the grain.
Add your cooked steak and Chimichurri sauce on top of your skillet. Serve and enjoy!

For a spicier chimichurri, add in a diced jalapeño or two (but remove the seeds unless you really like heat).
Letting the steak rest ensures a juicier steak. I know it can be tempting to slice it right away.
Use a very large cast iron skillet to spread your vegetables out in it as much as possible. This will ensure they roast and caramelize instead of steam.

Yes, you can substitute shishito peppers with bell peppers or jalapeños for a different flavor. Shishitos are mild and sweet - somewhere between bell peppers and jalapeños.
