Mix GF soy sauce, GF oyster sauce, GF fish sauce, 1 tbsp avocado oil, sesame oil, garlic powder, honey, and half of the minced garlic with the sliced beef in a bowl. Marinate for at least 2 hours, preferably 4 hours.

Heat 1 tbsp avocado oil or ghee in a wok over medium-high heat. Add sliced onions and cook for 2-3 minutes until softened.
Add the remaining minced garlic and cook for 1 minute until fragrant. Remove onions and garlic from the wok and set aside.

Heat the wok on medium-high heat. Add the marinated beef without the marinade juice to ensure a good sear.

Stir the beef every 30-60 seconds until cooked through and nicely seared.
Add the cooked onions, garlic, and 1 tbsp ghee (optional) to the wok. Stir for 1 minute.

Increase the heat to high and pour the reserved marinade juice into the wok. Stir for 3-5 minutes until the sauce thickens and coats the beef.
