Ingredients
- 3cupsPenne Pasta
- 400gDice Bacon
- 1packet Button Mushrooms, quartered
- 1big Onion, finely chopped
- 3cloves Garlic, finely chopped
- 1tspPaprika
- 50gTomato Paste
- 250mLCream
- 1LChicken Stock
- Fresh Herbs like Basil or Parsley for garnish
How to make Bacon and Mushroom One-Pot Pasta
Preparation
Chop the onions, mushrooms and garlic
In a measuring jug dissolved the Tomato paste in the Chicken stock and add the teaspoon of Paprika.
Cooking:
In a large pot, heat a drizzle of olive oil over medium heat.
Add the bacon pieces and cook until they start to crisp up
Toss in the onions, sautéing until they become translucent and fragrant, add garlic and sauté for a minute more.
Add the mushrooms and cook until they start to soften.
Pour in the pasta and enough stock to just cover it.
Cover pot with a lid. Bring the mixture to a boil, then reduce the heat and let it simmer. Stir occasionally to ensure the pasta doesn't stick.
Cook until the pasta is al dente and has absorbed most of the liquid. (Check cooking instruction on the back of your chosen pasta packet for cooking times.)
Pour in the cream, stir till well combined.
Finishing Touches
Once the pasta is cooked, sprinkle in a handful of basil or parsley
Tips & Tricks
Vegetable Swap: If you are missing mushrooms, feel free to swap them out with your favorite vegetables. A can of whole corn kernels words well as a substitute.
Herbs: Fresh herbs add a burst of flavor and freshness. Don't skip them if you can help it!
