Soak the fenugreek seeds and rice separately in water for 2–3 hours.
Drain and transfer both to a pressure cooker. Add 1.5 cups water, 1 tsp cow ghee and a pinch of salt.

Pressure cook for 2 whistles and allow the pressure to release naturally.

Prepare the coconut milk by blending fresh coconut, water, and green cardamoms until smooth. Strain to extract the thick coconut milk.

Once the pressure releases, check that the rice and methi seeds are cooked well and soft.
Add grated jaggery and cook on low heat until the jaggery completely dissolves, turning the porridge slightly golden.

Turn off the flame and add the thick coconut milk. Mix well.

Heat ghee and fry cashews until golden. Pour the ghee-cashew tempering over the ganji and mix generously.
