Ingredients

- 1sprigfreshly chopped parsley (optional, for garnish)
- 1qtcooking oil for frying (canola, vegetable, or peanut oil)
How to make Crispy Spicy Potato Chips
Preparation
Wash and peel the potatoes. Slice them thinly using a mandoline slicer or a sharp knife. Aim for slices that are about 1/16 inch thick for maximum crispiness.
Place the potato slices in a large bowl of cold water to remove excess starch. Let them soak for at least 30 minutes.
Seasoning
In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt. Set aside.
After soaking, drain the potato slices and pat them dry thoroughly with a kitchen towel or paper towels.
Frying
Heat the cooking oil in a deep fryer or a large pot to 350°F (175°C). Ensure the oil is hot enough by testing with a single potato slice—it should sizzle immediately.
Fry the potato slices in batches, making sure not to overcrowd the pot. Fry for 3-4 minutes, or until the chips turn golden brown and crispy. Stir occasionally to ensure even cooking.
Using a slotted spoon, transfer the chips to a paper towel-lined plate to drain excess oil.
Seasoning the Chips
While the chips are still hot, drizzle them with olive oil and sprinkle the spice mixture over them. Toss gently to ensure each chip is well coated.
