How to make Chipotle Peach Meatloaf

Preparation

  1. Step 1

    Preheat oven to 375 degrees and spray a ceramic shallow dish with cooking spray.

  2. Step 2

    Combine peaches, chipotle pepper, garlic, ketchup, smoke flavor, cayenne, mustard, salt, and apple cider vinegar in a food processor and pulse until smooth.

  3. Step 3

    Transfer the sauce mixture to a saucepan and bring to a low boil, stirring to prevent scalding. Remove from heat and cover.

Meatloaf Assembly

  1. Step 1

    Mix ground round, onion, egg, crackers, Worcestershire, seasoned salt, and thyme by hand or with a large spoon.

  2. Step 2

    Form the mixture into a meatloaf shape and place it in the prepared dish.

Cooking

  1. Step 1

    Bake the meatloaf for 30 minutes.

  2. Step 2

    Pour the chipotle peach sauce over the meatloaf and spread to coat evenly.

  3. Step 3

    Bake for an additional 30 minutes.

  4. Step 4

    Remove from oven and top with crumbled bacon and parsley.

  5. Step 5
