A tangy and flavorful South Indian rice dish made with lemon juice and a variety of spices.

Ingredients

2 Servings
(1 serving = 1 cup)

Main Ingredients

  • 1cup
    rice

For Tempering

  • 1 1/2tsp
    sunflower oil
  • 1piece
    lemon (juice)
  • 1tbsp
    peanuts
  • 1tsp
    mustard seeds
  • 1tsp
    urad dal
  • 1sprig
    curry leaves
  • 1piece
    dried red chilli

How to make Lemon Rice Andhra Special (Pulihora)

Tempering

  1. Heat a pan with sunflower oil and fry the peanuts for a minute or two on low flame.

  2. Add mustard seeds, urad dal, and dried red chilli. Fry for 1-2 minutes until they turn golden brown.

  3. Add curry leaves, and if using, hing and turmeric. Switch off the stove and allow it to cool down a bit.

Combining

  1. Add lemon juice to the tempered mixture.

  2. Quickly add the cooked rice and mix well.

  3. Allow the flavors to incorporate into the rice by letting it rest for 10-15 minutes, or serve immediately.

Tips & Tricks

  1. You can use leftover rice for this recipe.
