How to make Mini Mexican Meatloaves

  1. Step 1

In a large mixing bowl, combine the ground beef, crushed Doritos (or breadcrumbs), onion, bell pepper, garlic, egg, taco seasoning, cumin, chili powder, cilantro, 0.5 cup of the cheese, salt, and pepper. Save a little cilantro for topping later. Do not overmix.

  2. Step 2

Form the mixture into 4 patties, ensuring they are not flattened.

  3. Step 3

Heat a nonstick skillet over medium heat. Once hot, add the meatloaves and sear on one side for about 3 minutes. Flip and sear the other side for another 3 minutes.

  4. Step 4

Reduce the heat to medium-low. Top each meatloaf with salsa and the remaining cheese. Cover the skillet and let the meatloaves finish cooking while the cheese melts.

  5. Step 5

Serve hot, garnished with the reserved cilantro.
