Toasted Chicken Wraps with Spicy Green Sauce

Ingredients
For the Green Sauce
- 1bundlebasil leaves
- 1bundlecoriander (cilantro)
- 1medium green pepper, chopped
- 3clovegarlic
- 2small yellow onions, chopped
- 1spring onion, chopped
- 1lemon, juiced
- 1tspvinegar
- 1/4cupsunflower oil
- 1Serrano peppers
- 1dashsalt
- 1dashpepper
For the Wraps
- 4tortilla wraps
- 2cupcooked chicken
- 2cupgarden salad mix
- 1cupdiced tomatoes
- 1/2cuppickled red onions
- 1cupgreen sauce
How to make Toasted Chicken Wraps with Spicy Green Sauce
Prepare the Green Sauce
Add the basil, coriander, green pepper, garlic, yellow onions, spring onion, lemon juice, vinegar, sunflower oil, Serrano peppers, salt, and pepper to a blender.
Blend until smooth, scraping down the sides as needed.
Blitz for another 1-2 minutes until you achieve a creamy paste-like consistency. Set aside.
Assemble the Wraps
Lay a tortilla flat and spread a generous layer of the green sauce over it.
Add a layer of garden salad, followed by the cooked chicken, diced tomatoes, and pickled red onions.
Roll the wrap tightly, tucking in the edges to secure the filling.
Preheat your sandwich maker or panini grill.
Place the wrap in the grill and toast for about 5 minutes until the wrap is golden and crispy.
Slice the toasted wrap in half and serve warm with extra green sauce for dipping.
Tips & Tricks
For extra flavor, marinate the chicken with some of the green sauce before cooking.
Adjust the spiciness of the green sauce by adding more or fewer Serrano peppers.
