A delicious and flavorful Thai dish combining shrimp, pineapple, and rice.
Ingredients
- 1lblarge shrimp, cleaned and deveined
- 2pieceeggs, beaten with a dash of salt
- 1 1/2cupschopped fresh pineapple
- 1piecered bell pepper, diced
- 2tbspolive oil, divided
- 3/4cupchopped green onions
- 2clovegarlic, minced
- 1/2cupunsalted cashews, chopped
- 2cupscooked and chilled rice
- 1tbspsoy sauce
- 2tspchili garlic sauce
- 1piecesmall lime, halved
- Salt, to taste
How to make Thai Pineapple Fried Rice
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the beaten eggs and scramble until fully cooked. Remove from skillet and set aside.
Add the garlic and red bell pepper to the skillet. Sauté for about 2 minutes until fragrant.
Stir in the pineapple, green onions, and cashews. Cook for another 2-3 minutes.
Add the cooked rice, soy sauce, and chili garlic sauce. Stir well to combine.
Return the cooked shrimp and scrambled eggs to the skillet. Mix everything together and cook for an additional 2-3 minutes until heated through.
Season with salt to taste.
Serve with lime halves on the side.

Use day-old rice for the best texture in fried rice.
Adjust the amount of chili garlic sauce to your preferred spice level.
