How to make Bashonti Pulao

Preparation

  1. Step 1

    Soak the rice in water for 2 hours and drain after 2 hours.

  2. Step 2

    Mix turmeric, salt, and sugar into the rice and stir well.

  3. Step 3

    Grate ginger and squeeze out the juice, keeping the ginger fiber and juice aside.

  4. Step 4

    Add the ginger juice to the rice and mix well, then add the ginger fiber and mix again.

  5. Step 5

    Let the rice sit aside for 30 minutes.

  6. Step 6

    Mix saffron into the milk to achieve a pale yellowish tinge.

Cooking

  1. Step 1

    Heat a pan and add ghee. If unavailable, use unsalted butter or cooking oil. If using salted butter, add another 1 tbsp of sugar to the rice.

  2. Step 2

    Add the whole spices and fry until golden brown.

  3. Step 3

    Add the rice and fry for 10 minutes on low heat.

  4. Step 4

    Add the milk and fry for another 5 minutes.

  5. Step 5

    Add water, cover the pan with a lid, and let the rice cook for 30 minutes.

  5. Cook the rice on low heat to prevent burning and ensure even cooking.

  6. Use salt and sugar based on your personal preference. This is best had sweet and salt. I use pink salt.
