How to make Egg Chop Recipe

Prepare the Potato Mixture

  1. Step 1

Heat oil in a pan over medium heat and sauté the chopped onion until translucent.

  2. Step 2

Add ginger-garlic paste and chopped green chilies. Sauté until the raw smell disappears.

  3. Step 3

Add turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala. Mix well and cook until fragrant.

  4. Step 4

Add the mashed potatoes and mix thoroughly with the spices.

  5. Step 5

Stir in chopped fresh coriander leaves and salt. Mix again and remove from heat. Let the mixture cool completely.

Form the Egg Chops

  1. Step 1

Grease your palms lightly with oil and take a portion of the potato mixture.

  2. Step 2

Flatten the potato mixture in your palm to form a patty and place half or a quarter of a hard-boiled egg in the center.

  3. Step 3

Carefully bring the edges of the potato mixture together to completely cover the egg. Shape it into an oval or egg-like shape.

  4. Step 4

Repeat the process for all the egg halves.

Coat the Egg Chops

  1. Step 1

Set up a dredging station with beaten egg in one bowl and breadcrumbs in another.

  2. Step 2

Dip each shaped egg chop into the beaten egg, then coat it evenly with breadcrumbs.

  3. Step 3

Place the coated egg chops on a tray and refrigerate them for 20-30 minutes to firm up.

Fry the Egg Chops

  1. Step 1

Heat oil for deep frying in a deep pan or wok over medium-high heat.

  2. Step 2

Carefully slide a few egg chops into the hot oil and fry until golden brown and crispy, turning occasionally.

  3. Step 3

Remove the egg chops from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve

  1. Step 1

Serve the hot, crispy egg chops immediately with chutney or ketchup. Sprinkle chaat masala on top for extra flavor, if desired.

Tips & Tricks

  1. Ensure your boiled potatoes are as dry as possible after mashing to avoid soggy chops.

  2. Let the potato mixture cool completely before shaping to make it easier to handle.

  3. Refrigerating the shaped chops before frying helps them hold their shape and become crispier.

  4. Maintain a consistent medium-high heat for frying to ensure even cooking and crispiness.

  5. Use panko breadcrumbs for extra crispiness, or semolina for a different texture.
