Easy Chicken Penne Pasta

Ingredients
- 300gpenne pasta
- 1lemon, zest and juice
- 1/2tspblack pepper
- 1/2tspchili flakes
- 2tbsproughly chopped coriander
- 2boneless, skinless chicken breasts
- 4tbspolive oil
- salt to taste
How to make Easy Chicken Penne Pasta
Cook the Penne
Cook the penne according to the packet instructions in salted boiling water.
Drain and toss with lemon zest, lemon juice, black pepper, chili flakes, and coriander.
Cook the Chicken
Heat olive oil in a skillet over medium heat.
First season with black pepper, salt and red chili. Then brush with mayonnaise.
Baste with garlic and oil, and grill for 4-5 minutes until fully cooked.
Allow the chicken to rest for 10 minutes.
Slice the chicken into thin strips.
Serve the sliced chicken over the prepared penne pasta.
Drizzle with any remaining olive oil from the skillet for extra flavor.
Tips & Tricks
For extra flavor, use high-quality olive oil.
mayonnaise locks in the flavor and also helps browning the chicken when you pan fry.
Adjust the amount of chili flakes to suit your spice preference.
