Chicken Ciabatta Sandwich

- 1piecelarge tomato
- 1/2cupartichoke hearts
- 10sprigsfresh basil leaves
- 2piecegrilled chicken breasts
- 1/4cupspicy red pepper sauce
- 1/2cupbeet, apple & red onion relish
Pea Basil Pesto
- 1/2cupfresh basil leaves
- 1/4cuppeas
- 1/4cupgrated Parmesan cheese
- 1/4cupolive oil
- 1clove garlic
- salt and pepper
Beet, Apple & Red Onion Relish
- 1/2cupshredded beetroot
- 1/2pieceapple
- 1/4cupred onion
- 1tbspapple cider vinegar
- 1/2tbsphoney
- salt and pepper
How to make Chicken Ciabatta Sandwich
Make the Pea Basil Pesto
Combine basil leaves, peas, Parmesan cheese, olive oil, garlic, salt, and pepper in a blender.
Blend until smooth. Set aside.
Prepare the Beet, Apple & Red Onion Relish
In a bowl, mix the shredded beetroot, diced apple, red onion, apple cider vinegar, and honey.
Season with salt and pepper. Toss well and set aside.
Assemble the Sandwich
Spread a generous layer of pea basil pesto on each ciabatta roll's bottom half.
Layer the sliced tomatoes and chopped artichoke hearts over the pesto.
Add fresh basil leaves on top of the artichokes.
Place sliced grilled chicken on the basil leaves and spread spicy red pepper sauce over the chicken.
Spoon a layer of beet, apple & red onion relish over the top.
Finish and Serve
Place the top half of the ciabatta roll over the loaded ingredients, press gently, and enjoy your deliciously layered chicken ciabatta sandwich.
Tips & Tricks
For extra flavor, grill the ciabatta rolls before assembling the sandwich.
Adjust the amount of spicy red pepper sauce to your taste preference.
