Ingredients
Filling
- 1tbspolive oil
- 1cupchopped yellow onion
- 1lbground turkey
- 1tspdried parsley
- 1tspdried thyme leaves
- smoked paprika
- garlic powder
- salt
- ground black pepper
- 2tbspall-purpose flour
- 1cupchicken broth
- 1cupfrozen peas and carrots, thawed
Topping
- 2piecelarge sweet potatoes
- 2tbspunsalted butter, melted
- 4tbspplain Greek yogurt
- garlic powder
- salt
- ground black pepper
How to make Turkey and Sweet Potato Shepherd's Pie
Prepare the Filling
In a large skillet over medium heat, sauté the chopped yellow onion in olive oil until softened, about 3-4 minutes.
Add the ground turkey, dried parsley, dried thyme leaves, smoked paprika, garlic powder, salt, and ground black pepper. Cook until the meat is browned.
Add the all-purpose flour, chicken broth, and thawed frozen peas and carrots. Bring to a simmer for about 5 minutes.
Prepare the Topping
Poke holes in the sweet potatoes with a fork and microwave until soft, about 10 minutes, turning halfway.
Preheat the oven to 400 degrees F (205 degrees C).
Scoop the flesh of the potatoes into a large bowl and mash with melted unsalted butter, plain Greek yogurt, garlic powder, salt, and ground black pepper. Mix until fluffy and well combined.
Assemble and Bake
Transfer the turkey mixture to an 8x8-inch baking dish.
Layer the mashed sweet potatoes on top.
Bake for 25 minutes, then broil for 2-4 minutes until the top browns at the edges.
Tips & Tricks
For a smoother sweet potato topping, use a potato masher or a hand mixer.
Adjust the seasoning to taste, adding more smoked paprika or garlic powder if desired.
