- 1/2cupSpinach Leaves
- 1/4cupFresh Cilantro
- 1pieceLime

- Unsweetened Light Coconut Milk
- Chickpeas
- Salt and Pepper
How to make Coconut Curry Chicken
Cooking Instructions
Heat the olive oil in a large skillet over medium heat.
Add the chicken and cook until browned on all sides.
Add the onion, garlic, curry powder, cumin, coriander, and turmeric and cook for 1 minute more.
Stir in the coconut milk, chickpeas, broccoli, spinach, cilantro, and lime juice.
Bring to a boil, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through and the vegetables are tender.
Season with salt and pepper to taste.
Serve over rice or with naan bread.
Tips & Tricks
For a richer flavor, use full-fat coconut milk instead of light coconut milk.
Garnish with additional fresh cilantro for extra freshness.
