How to make Corn Soup

  1. Step 1

    Boil the corn kernels with enough water until they start floating. Then strain them.

  2. Step 2

    Divide the boiled corn into two equal halves. Transfer one portion into a mixer jar and grind it to a fine paste by adding enough water.

  3. Step 3

    Heat a khadai and add butter. Add the chopped carrot, French beans, and capsicum. Sauté for one minute on medium to high flame. Remove from the flame and set aside.

  4. Step 4

    In the same khadai, add the ground corn paste along with vegetable stock water. When it starts bubbling, turn the flame to medium to high and let it simmer for 5 minutes. Discard the scum that floats on the surface to get clear soup.

  5. Step 5

    After 5 minutes, add the other portion of boiled corn along with sautéed veggies, salt, sugar, vinegar, pepper powder, and soya sauce. Let it boil for another 4-5 minutes.

  6. Step 6

    Meanwhile, make a corn flour slurry by mixing corn flour with 2-3 tbsp of water. Add this slurry to the soup and stir continuously to avoid lumps. Boil for another minute.

  7. Step 7

    Finally, sprinkle chopped spring onion and turn off the flame. Your tasty and easy corn soup is ready to enjoy!
