How to make Beef Enchilada Lasagna

Preparation

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Melt the butter and garlic over medium heat. Add the diced peppers and sauté until soft and fragrant.

  3. Step 3

    Add the ground beef to the peppers and brown it. Stir in the taco seasoning.

  4. Step 4

    Add the enchilada sauce and Mojo sauce. Stir to combine, reduce the heat, cover, and simmer for 5 minutes.

Assembly and Cooking

  1. Step 1

    Whisk together the ricotta cheese, egg, half of the Monterrey Jack cheese, and half of the Cheddar cheese.

  2. Step 2

    Spray a 9x11 glass baking pan with nonstick spray.

  3. Step 3

    Layer the lasagna starting with tortillas, then the ricotta mixture, beef mixture, shredded cheeses, and repeat. Ensure the shredded cheeses are the last layer on top.

  4. Step 4

    Cover the pan with aluminum foil and bake for one hour.

  5. Step 5

    Uncover and bake until the cheese has melted.

  6. Step 6

    Top with fresh cilantro and sour cream before serving.
