- 1tbspolive oil
- 1pieceonion, chopped
- 1piecebell pepper, chopped
- 1canblack beans, rinsed and drained
- 1piecesweet potato, diced
- 1/2cupsalsa
- 1/4cupcilantro, chopped
- 12piececorn tortillas
How to make Black Bean and Sweet Potato Tacos
Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and sauté until softened, about 5 minutes.
Stir in the salsa and cilantro.
Tips & Tricks
You can cook the sweet potato in advance by roasting it in the oven until tender.
