How to make Yule Log

For the Cake

  1. Step 1

In a bowl, beat the eggs, honey, and sugar until the mixture reaches the ribbon stage.

  2. Step 2

Gently fold in the dry ingredients.

  3. Step 3

Add the melted and cooled butter, mixing until fully incorporated.

  4. Step 4

Pour the batter onto a baking tray greased with butter and lined with parchment paper, also greased with butter.

  5. Step 5

    Bake at 200°C (390°F) for 10 minutes.

  6. Step 6

Remove from the oven and the tray, and keep it covered with cling film or a damp cloth to prevent it from drying out.

For the Filling

  1. Step 1

In a bowl, combine the chocolate with the warm dulce de leche, mixing until a smooth paste forms.

  2. Step 2

Add the softened butter and the heavy cream (do not whip the cream).

Assembly

  1. Step 1

Spread part of the chocolate cream over the surface of the cake.

  2. Step 2

Roll the cake tightly and refrigerate.

  3. Step 3

Before covering it with the remaining cream, trim the ends with a sharp knife. Use these trimmed pieces to place along the sides of the roll to mimic the appearance of pruned tree branches.

  4. Step 4

Frost the entire surface of the roll with the remaining chocolate cream.

  5. Step 5

Use a fork to create lines in the frosting, imitating the texture of tree bark.
