How to make Shrimp Fajitas with Bell Peppers and Onions
Preparation
Preheat oven to 400 degrees F (200 degrees C).
Arrange bell peppers and onions on a parchment-lined sheet tray. Drizzle with olive oil and a pinch of salt.
Bake in the oven for 20 minutes.
Cooking
Toss the shrimp with taco seasoning, olive oil, and salt.
Add the seasoned shrimp to the same sheet pan, return to the oven and bake for 5 more minutes.
Serving
Toast the flour tortillas in the oven, or wrap them in a damp paper towel and microwave for 30 seconds.
Serve with avocado, salsa, a dollop of sour cream, and a sprinkle of fresh cilantro.
