How to make Masala Brinjal

Cooking Instructions

  1. Heat oil in a pan and add the bay leaf.

  2. When the bay leaf turns blackish brown, add crushed garlic and green chillies. Cook until aromatic.

  3. Add finely chopped onion and cook until browned.

  4. Add tomato paste and cook until the oil separates from the mixture.

  5. Stir in the spices: chaat masala, garlic chutney, chilli powder, dhania powder, salt, haldi, and garam masala.

  6. Add the brinjal and stir-fry for 5 minutes.

  7. Cover and cook for 15 minutes until the brinjal is tender.
