How to make Aunt Kerrie's Noedeslaai (Noodle Salad)

Cook the pasta

  1. Step 1

Follow the package instructions to cook the pasta until al dente. Once done, drain and rinse thoroughly under cold water to remove any excess starch and prevent sticking. Add to a large serving bowl.

  2. Step 2

You can use any pasta shape, though twisty shapes hold the dressing well. Be careful not to overcook the pasta to avoid a mushy texture.

Prepare the salad base

  1. Step 1

Add the chopped red onion, peppers, grated carrot, and corn kernels to the salad.

  2. Step 2

Crumble the feta cheese into the salad and mix until evenly distributed. Set aside.

  3. Step 3

For best results, chill the salad for at least 1 hour before serving. It stays fresh in the fridge for up to 5 days.

Make the dressing

  1. Step 1

Combine the Wellington’s Full Flavour Tomato Sauce, Wellington’s Chutney Mild, and the rest of the sauce ingredients in a small bowl and whisk until smooth.

  2. Step 2

Alternatively, place the ingredients in a jar and shake until well mixed.

Assemble the salad

  1. Step 1

Toss the salad with the dressing and garnish with fresh chopped parsley and chopped coriander.

  2. Step 2

Serve alongside your favorite braaivleis and sides and enjoy!

  3. Step 3

Preparing the salad a day in advance enhances the flavor. Store in an airtight container in the fridge and keep it cool when serving outdoors. Avoid freezing or exposure to high heat.
