A healthier version of lemon tart with a base made from oats and peanut butter, filled with a creamy lemon filling.

Ingredients

4 Servings
(1 serving = 1 tart)

For Tart Base

  • 1cup
    oats
  • 1tbsp
    peanut butter
  • 2tsp
    cocoa powder
  • 1/2tsp
    vanilla essence
  • 3/4cup
    maple syrup
  • 1pinch
    salt

For Tart Filling

  • 1/4cup
    cottage cheese (paneer)
  • 2tbsp
    cream cheese
  • 1/2tsp
    vanilla essence
  • 1/3cup
    maple syrup
  • 2tsp
    caramelised lemon
  • 10g
    white chocolate

To Caramelize Lemon (Optional)

  • 1piece
    lemon
  • 1/2cup
    water
  • 1dash
    jaggery or sugar (optional)

How to make Healthier Lemon Tart

For Tart Base

  1. Preheat the oven to 180°C.

  2. Mix oats, peanut butter, cocoa powder, vanilla essence, maple syrup, and a pinch of salt well.

  3. Spread small portions of the mixture into greased molds.

  4. Bake in the preheated oven for 20 minutes.

  5. Once cooled down, fill the tart with the filling using a piping bag.

For Tart Filling

  1. Blend cottage cheese, cream cheese, vanilla essence, maple syrup, caramelised lemon, and white chocolate until smooth.

  2. Fill the cooled tart bases with the prepared filling using a piping bag.

To Caramelize Lemon (Optional)

  1. Cut thin slices of lemon and cook them in water and jaggery or sugar until the syrup is thick.

  2. Alternatively, use finely grated lemon rind and lemon juice with a little maple syrup to replace the sweetness of caramelized lemon.

Tips & Tricks

  1. Ensure the tart base is completely cooled before filling to avoid melting the filling.

  2. You can use store-bought caramelized lemon to save time.
