How to make Maharashtrian Shev Sabzi

  1. Step 1

    Heat oil in a pan and add mustard seeds. Let them splutter.

  2. Step 2

    Add cumin seeds and curry leaves.

  3. Step 3

    Add chopped onions and cook until they turn golden brown.

  4. Step 4

    Add ginger-garlic paste and cook until raw smell disappears.

  5. Step 5

    Add chopped tomatoes and cook until they soften and blend well.

  6. Step 6

    Mix in the turmeric, red chili powder, coriander powder, and salt.

  7. Step 7

    Add 1/2 cup water, mix well, cover, and simmer until the oil starts to separate and the gravy thickens.

  8. Step 8

    Just before serving, add sev into the gravy and mix well. Let it soak in the masala for 1–2 minutes (not longer, to avoid sogginess).

  9. Step 9

    Garnish with chopped coriander leaves and serve hot with roti or bhakri.
