Ingredients
- 1cupsprouted whole wheat flour
- 1cupsprouted oat flour
- 1/2cupground flaxseed
- 1tbspchia seeds
- 2tspbaking powder
- 1tspbaking soda
- 1/2tspsalt
- 1/4cupmaple syrup
- 1/4cupunsweetened applesauce
- 1/4cupcoconut oil, melted
- 1/2cupplant-based milk (like oat or almond)
- 1pieceripe banana, mashed
- 1/4cupchopped walnuts
How to make Sprouted Grain and Flaxseed Breakfast Bread
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, whisk together sprouted whole wheat flour, sprouted oat flour, ground flaxseed, chia seeds, baking powder, baking soda, and salt.
In a separate bowl, whisk together maple syrup, applesauce, melted coconut oil, plant-based milk, and mashed banana.
Pour wet ingredients into dry ingredients and stir until just combined. Fold in chopped walnuts.
Pour batter into prepared loaf pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Let cool completely in the pan before slicing.
Tips & Tricks
For a sweeter bread, increase the maple syrup to 1/3 cup.
Add other mix-ins like dried cranberries, blueberries, or dark chocolate chips for extra flavor and texture.
Store bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
