- 1tbspParsley or coriander leaves, chopped

How to make Baked Sweet Potato Accordion

Wash and peel the sweet potatoes, slice off the tops and bottoms to make flat edges. Slice lengthways into 2 to 3 slices of each sweet potato, depending on their width.
Place the slice between 2 chopsticks, first slice one side vertically, then flip the side and slice diagonally. Repeat with all the sweet potatoes.
Take a bowl and mix the herbs, spices, and olive oil. Brush each slice with this mixture evenly.
Bake for at least 30 minutes until crisp and golden.
