How to make Festive Leg of Lamb

  1. Step 1

Clean the leg of lamb, removing all visible fat, and sear it in a skillet with a little olive oil until golden. Season with salt and pepper.

  2. Step 2

In a bowl, place the foie gras and mash it with a fork. Mix it with the rosemary and thyme. Spread this mixture evenly over the leg of lamb.

  3. Step 3

Lay the puff pastry sheet on your work surface, keeping it on its parchment paper. Wrap the leg of lamb with the pastry, sealing the edges of the puff pastry.

  4. Step 4

Prepare a baking dish by greasing it with olive oil or butter and sprinkling it with salt, pepper, and a little thyme.

  5. Step 5

Place the puff pastry-wrapped leg of lamb in the prepared dish and bake in a preheated oven at 200°C (390°F) for approximately 40–45 minutes.

  6. Step 6

If the puff pastry browns too quickly, cover it with aluminum foil.

  7. Step 7

Remove from the oven and let it rest for 15 minutes before serving.

Tips & Tricks

  1. Ensure the puff pastry is sealed tightly to prevent juices from leaking out during baking.

  2. Let the lamb rest after baking to allow the juices to redistribute, ensuring a tender and juicy result.

  3. If you don’t have foie gras, you can substitute it with a pâté or a similar spreadable meat product.

FAQS

  1. Can I use a different cut of meat?

Yes, you can use this same method of preparation with other cuts of meat, such as pork or beef.

  2. What can I serve with this dish?

This dish pairs well with fried onion rings, roasted vegetables, or a fresh green salad.

  3. How do I prevent the puff pastry from burning?

If the puff pastry browns too quickly, cover it with aluminum foil during baking.

  4. Can I prepare this dish in advance?

You can prepare the lamb and wrap it in puff pastry ahead of time, but bake it just before serving for the best results.

  5. What temperature should the lamb be cooked to?

For medium-rare lamb, the internal temperature should reach 60°C (140°F). Use a meat thermometer to check.
