How to make Roasted Tomato Burrata Dip with Garlic Bread Crostini
Prepare the roasted tomato burrata dip
- Step 1
Add grape tomatoes to a baking dish and drizzle with just enough olive oil to coat the bottom of the dish. You want your tomatoes to be in one layer, so make sure you use a baking dish large enough.
- Step 2
Season with salt, pepper, red pepper flakes, garlic, parsley, and oregano.
- Step 3
Bake at 350°F for 16-20 minutes until tomatoes burst. You can gently smash them about halfway through baking if they need assistance in bursting.
Prepare the garlic bread crostinis
- Step 1
While the tomatoes bake, slice the baguette and spread with garlic butter made from butter, garlic, salt, seasonings, and parmesan.
- Step 2
Toast the baguette slices for 5–7 minutes until golden.
Assemble and serve
- Step 1
Once ready to serve, top the roasted tomatoes with parmesan, fresh basil, and burrata filling. if you’re using a ball of burrata, split it in half, squeeze the filling in, then chop up the outer shell and mix it in.
- Step 2
Stir everything together and serve hot with the garlic bread crostinis.

Tips & Tricks
I highly recommend the stracciatella cheese for this recipe, but understand some local stores won’t carry just burrata filling. make sure to take your burrata / burrata filling out of the fridge about 30 minutes before serving. If it’s too cold, it won’t mix in as well!
Smash the tomatoes halfway through baking if they don't burst naturally.
Serve the dip hot for the best flavor experience, but delicious once it cools off, too!
Adjust the red pepper flakes to your heat preference.
Use fresh herbs for a more vibrant flavor.
FAQS
Can I use a different type of cheese instead of burrata?
Yes! I always use stracciatella (burrata filling) but here are some other options: ricotta, mascarpone, feta, Boursin
Can I make the garlic bread ahead of time?
Yes, you can prepare the garlic butter and toast the bread ahead of time. Reheat briefly before serving.
What can I serve with this dip besides garlic bread?
You can serve it with crackers, pita chips, or fresh vegetable sticks.
How do I store leftovers?
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 350 for 15-20 minutes before serving.
Can I make this dip spicier?
Yes, increase the amount of red pepper flakes or add a pinch of cayenne pepper. A dash of hot honey would also be amazing!
