Egg Chowmein is a delicious and flavorful Indian-Chinese fusion dish, combining stir-fried noodles with eggs and a medley of vegetables, tossed in a savory sauce.
Ingredients
- 200gHakka noodles
- 2tbspcooking oil
- 2pieceeggs
- 1pieceonion
- 1piececarrot
- 1/2cupcabbage
- 1/2cupbell peppers
- 2tbspsoy sauce
- 1tbsptomato ketchup
- 1tbspred chili sauce
- 1/2tspblack pepper powder
- 1sprigspring onion
How to make Egg Chowmein
Boil the Hakka noodles as per the package instructions, drain the water, and rinse with cold water to prevent sticking. Set aside.
In a pan, heat oil over medium heat. Add beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.
In the same pan, add oil and sauté finely chopped onion, julienned carrot, shredded cabbage, and sliced bell peppers for 3-4 minutes until the vegetables are slightly tender.
Add the cooked noodles, scrambled eggs, soy sauce, tomato ketchup, red chili sauce, and black pepper powder. Mix well and stir-fry for 2-3 minutes.
Garnish with chopped spring onion greens and serve hot.
Tips & Tricks
Rinse the noodles with cold water to prevent them from sticking together.
Adjust the amount of chili sauce according to your spice preference.
