Egg Chowmein is a delicious and flavorful Indian-Chinese fusion dish, combining stir-fried noodles with eggs and a medley of vegetables, tossed in a savory sauce.

Ingredients

4 Servings
(1 serving = 1 bowl)
  • 200g
    Hakka noodles
  • 2tbsp
    cooking oil
  • 2piece
    eggs
  • 1piece
    onion
  • 1piece
    carrot
  • 1/2cup
    cabbage
  • 1/2cup
    bell peppers
  • 2tbsp
    soy sauce
  • 1tbsp
    tomato ketchup
  • 1tbsp
    red chili sauce
  • 1/2tsp
    black pepper powder
  • 1sprig
    spring onion

How to make Egg Chowmein

  1. Boil the Hakka noodles as per the package instructions, drain the water, and rinse with cold water to prevent sticking. Set aside.

  2. In a pan, heat oil over medium heat. Add beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.

  3. In the same pan, add oil and sauté finely chopped onion, julienned carrot, shredded cabbage, and sliced bell peppers for 3-4 minutes until the vegetables are slightly tender.

  4. Add the cooked noodles, scrambled eggs, soy sauce, tomato ketchup, red chili sauce, and black pepper powder. Mix well and stir-fry for 2-3 minutes.

  5. Garnish with chopped spring onion greens and serve hot.

Tips & Tricks

  1. Rinse the noodles with cold water to prevent them from sticking together.

  2. Adjust the amount of chili sauce according to your spice preference.
