Clean and Easy Sloppy Joe Bowl

I have finally found a cleaner sloppy joe mix that’s super easy to make thanks to @simplyorganicfoods. This was a super find and a perfect addition to my sloppy joe bowl. Turning traditional sloppy joes into a bowl was a fun twist on this family classic.
The sloppy joe comes together quickly and the rest of the cooking time is passive cooking the sweet potatoes in the oven.

How to make Clean and Easy Sloppy Joe Bowl
Prepare Sweet Potatoes

On a large baking sheet, spread the pre-cut sweet potatoes in a single layer. Coat with olive oil and season with salt and pepper.

Bake for 35 minutes, turning once at 20 minutes, until beginning to brown.
Prepare Sloppy Joe Mix

In a large bowl, combine tomato paste, water, and sloppy joe mix packets. Mix to combine.
- Step 2
Heat a large skillet to medium-high heat and brown the turkey.
- Step 3
Stir in the lentils and pour over the sloppy joe mix. Heat until the mix thickens and bubbles slightly.
Assemble the Bowl
- Step 1
Microwave the rice according to instructions and layer it on one side of a pasta bowl.
- Step 2
On the other side of the pasta bowl, add the arugula and layer the sweet potatoes on top of the arugula.
- Step 3
Add the sloppy joe mix on top of the rice.
