How to make Sweet Chermoula Whole Roasted Cauliflower

  1. Step 1

Preheat the oven to 200°C (180°C fan). Stir all the ingredients for the sweet chermoula together in a bowl until smooth. Alternatively, you can place all the ingredients in a food processor.

  2. Step 2

With a sharp knife, remove the bottom stalk of the cauliflower and any remaining leaves without damaging the core. Ensure the cauliflower can sit flat in the roasting pan.

  3. Step 3

Place the cauliflower upside down and fill it with half of the sauce. Shake it gently to ensure the sauce reaches the inner parts of the cauliflower.

  4. Step 4

Carefully flip the cauliflower inside the roasting pan (core side-down) and use a brush or your fingers to cover the cauliflower with the rest of the sauce.

  5. Step 5

Cover the cauliflower with aluminum foil and place it in the oven for 20 minutes or until it is almost cooked (a knife should insert with some difficulty).

  6. Step 6

Uncover the pan and return it to the oven for another 15 to 20 minutes until the cauliflower is soft, fully cooked (a knife should insert easily), and nicely golden.

  7. Step 7

Serve the roasted cauliflower with flaked almonds and lettuce leaves if desired.
