Add rice flour and besan (chickpea flour) to the spiced bhindi and mix thoroughly. Add oil and water(if required ) to the mixture and mix well. Let the marinated bhindi rest for 10-15 minutes.
- Step 5
Heat oil in a pan and deep fry the marinated bhindi on medium to low flame until crispy.
- Step 6
Heat oil in a pan and deep fry the marinated bhindi on medium to low flame until crispy. Fry in small batches so they don’t stick together.

Tips & Tricks
Ensure the bhindi is completely dry before marinating to avoid sogginess.
Fry the bhindi in small batches to maintain the oil temperature and achieve even crispiness.
Always fry in medium-hot oil (not too low, not smoking). Low heat makes bhindi oily, high heat can burn spices.
Adjust the spice levels according to your preference.
Serve immediately after frying for the best texture and flavor.
FAQS
Can I use frozen bhindi for this recipe?
It is recommended to use fresh bhindi for the best texture and flavor. Frozen bhindi may release water and affect the crispiness.
Can I bake the bhindi instead of deep frying?
Yes, you can bake for kurkuri bhindi in oven or airfryer at 180°C (350°F) for 20-25 minutes, flipping halfway through, but the texture may not be as crispy as deep-fried.
How do I prevent the bhindi from becoming slimy?
Ensure the bhindi is completely dry before slicing and marinating. Avoid overcrowding the pan while frying.
Can I store leftover fried bhindi?
Fried bhindi is best enjoyed fresh, but you can store leftovers in an airtight container for up to a day. Reheat in an oven or air fryer for crispiness.
