How to make Carrot Jamun
Prepare carrot balls
- Step 1
Peel and cut the carrot into pieces. Transfer to a mixer jar and grind to a fine paste by adding 1/2 cup of milk.

Heat a pan and add ghee. Then add the ground carrot paste and sauté for 5 minutes on medium to low flame.

Add 1/2 cup of sugar and mix well. When the sugar dissolves completely, add 1/2 cup of milk.

Mix and add the semolina/rava. Cook until it becomes thick and non-sticky. Let it cool down completely.

After cooling, make small gooseberry-sized balls. Steam the carrot balls for 5 minutes, then let them cool down completely and set aside.
Prepare milk

Make corn flour slurry by mixing 1 tbsp corn flour with a little milk. Set aside.
- Step 2
In a pressure cooker, add 1/2 L milk and 3/4 cup sugar. Boil on medium to high flame until it starts bubbling.
- Step 3
Turn the flame low, close the lid, and put the whistle on it. Keep the flame very low, ensuring the whistle does not make a sound. Boil for 30 minutes.
- Step 4
After 30 minutes, turn off the flame and let the pressure release completely. Open the lid; the milk should be light brown.
- Step 5
Add butter and boil again. Then add steamed carrot balls and cardamom powder. Allow to boil for 5 minutes on medium flame.
- Step 6
Add corn flour slurry and stir continuously to avoid lumps. When the milk thickens slightly, turn off the flame.
