- 500gfresh strawberries
- 2cupsall-purpose flour
- 1tbspbaking powder
- 1pinchsalt
- 2pieceeggs

- 1tspvanilla essence
- 1tbsplemon juice

- 1cupplain yogurt
- Icing sugar/powdered sugar (for dusting)
How to make Strawberry Cake - Soft, Moist & Irresistible
Preheat the Oven and Prepare the Cake Tin
Preheat your oven to 175°C (fan mode). Grease a 9-inch round cake tin and line both the base and sides with parchment paper for easy removal after baking.
Prepare the Strawberries
Wash the strawberries thoroughly. Dice a few strawberries for mixing into the batter and slice the remaining in half for topping. Set aside.
Mix the Dry Ingredients
Sift the all-purpose flour, baking powder, and salt into a medium bowl and set it aside.
Combine the Wet Ingredients
In a large mixing bowl, crack the eggs and add the sugar, vanilla essence, lemon juice, oil, and yogurt. Whisk until the mixture is smooth and well combined.
Create the Batter
Gradually add the sifted dry ingredients to the wet mixture, folding gently until the batter is smooth and lump-free. Avoid overmixing, as it may result in a dense cake.
Gently fold in the diced strawberries, ensuring they are evenly distributed throughout the batter.
For Baking
Transfer the batter to the prepared cake tin, spreading it evenly. Arrange the halved strawberries on top for decoration.
Place the tin in the preheated oven and bake for 40-45 minutes. Then, loosely cover the cake with foil to prevent over-browning and continue baking for another 8-10 minutes, or until a skewer or toothpick inserted into the centre comes out clean.
Cool & Serve
Once baked, remove the cake from the oven and let it cool to room temperature. Dust the top with icing sugar before slicing.
