How to make Classic Badam Milkshake Recipe

Prepare the Almonds

  1. Step 1

If you haven't soaked them overnight, blanch almonds by soaking them in hot water for 20-30 minutes. This makes peeling the skin very easy.

  2. Step 2

Once soaked, peel the skin off the almonds.

  3. Step 3

In a blender, combine the peeled almonds with about 1/4 cup of the milk and blend to a very smooth paste. Add a little more milk if needed to get a smooth consistency. The smoother the paste, the creamier your milkshake will be.

Prepare the Milk Base

  1. Step 1

In a heavy-bottomed pan, heat 2 cups of milk.

  2. Step 2

Add the sugar and green cardamom powder. Stir well until the sugar dissolves.

  3. Step 3

If using custard powder, mix it in a small bowl with about 1/4 cup of cold milk until there are no lumps.

  4. Step 4

Once the milk in the pan is warm, add the custard powder mixture (if using) to it, stirring continuously to prevent lumps.

  5. Step 5

Bring the milk to a gentle boil over low to medium heat, stirring occasionally for about 10-15 minutes, or until it thickens slightly.

Combine and Simmer

  1. Step 1

Add the almond paste to the simmering milk mixture. Mix thoroughly to combine.

  2. Step 2

Continue to cook on low heat for another 5 minutes, stirring often. The raw smell of almonds should disappear, and the mixture should thicken further.

Add Saffron and Cream

  1. Step 1

Take a tablespoon of the warm milk mixture in a small bowl, add the saffron strands to it, and let them steep for a minute to release their color and flavor. Then add this saffron-infused milk back to the pan.

  2. Step 2

Add the fresh cream (if using) and mix well.

  3. Step 3

Remove the pan from the heat.

Chill and Serve

  1. Step 1

Allow the badam milkshake mixture to cool down completely at room temperature.

  2. Step 2

Once cooled, refrigerate for at least 3-4 hours, or until thoroughly chilled. For best results, chill overnight.

  3. Step 3

Before serving, give it a good stir.

  4. Step 4

Pour into serving glasses. You can add a few ice cubes if you prefer it extra cold.

  5. Step 5

Garnish with finely chopped almonds or pistachios, and a few extra saffron strands if desired.

Tips & Tricks

  1. Soaking almonds overnight makes them easier to peel and blend, and is also believed to improve digestibility.

  2. Ensure the almond paste is very smooth for a lump-free and creamy milkshake.

  3. Adjust sugar according to your preference. You can also use honey or other sweeteners.

  4. Custard powder gives a lovely thickness and creamy mouthfeel. If you don't want to use it, you can simply reduce the milk by simmering it longer to achieve a thicker consistency, or add a bit of cornflour mixed in cold milk.

  5. For flavor variations, add a few drops of rose water for a floral note or include a pinch of nutmeg for a warm spice flavor.
