How to make Creamy Mushroom Linguini
Linguini
- Step 1
Lightly flour a counter surface and flatten the pasta dough with a rolling pin to about 3mm thick.
- Step 2
Bring a medium pot of water to a boil with a little olive oil.
- Step 3
Feed each sheet of dough through a pasta roller on the wide setting (#5), then again on a smaller setting (#4), and a final time on your chosen setting (#2).
- Step 4
Attach the linguini cutter to the machine and feed each pasta sheet through to cut it into ribbons.
- Step 5
Place the linguini into the boiling water and stir to prevent clumping. Boil for 3-4 minutes.
Mushroom Sauce
- Step 1
Heat a pan on medium heat. Add the olive oil, then the onions and sauté until golden brown.
- Step 2
Add the mushrooms and sauté until slightly browned.
- Step 3
Add the garlic and flour. Mix until well combined.
- Step 4
Add the cream and stir. Season with salt and pepper.
- Step 5
Add half of the parmesan and turn down the heat to let the sauce simmer and reduce to a medium-thick consistency.
Assemble
- Step 1
Drain the pasta but reserve the pasta water.
- Step 2
Add the cooked linguini to the sauce and simmer.
- Step 3
Pour a little pasta water into the sauce to loosen it up.
- Step 4
Once the sauce is coating the pasta, turn off the heat.
- Step 5
Serve and sprinkle with the rest of the parmesan cheese.
