How to make Chicken Scallopini

Cooking Instructions

  1. Step 1

    Heat a griddle pan until it is smoking hot. Add a little olive oil, then the chicken thighs. Season with salt and pepper.

  2. Step 2

    Brown the chicken thighs on both sides, then remove them from the pan. Once all the chicken thighs are browned, in the same pan, flash fry the mushrooms until sealed on the outside, then set aside.

  3. Step 3

    Heat a large pan and add the remaining olive oil. Add the onions and sauté until golden brown. Add the lemon juice & zest. Add the cream, half of the parmesan cheese and mushrooms.

  4. Step 4

    Turn off the heat and transfer everything into an oven proof dish.

  5. Step 5

    Bake in the oven until chicken has cooked through and sauce has thickened. Serve & sprinkle the rest ove the parmesan cheese over.
